Beef Bulgogi Tacos

  • Also goes well with jasmine rice

Ingredients

  • Ground beef - 1 lb
  • Garlic - 1 large clove, minced
  • Ginger - 1 inch, minced
  • Soy sauce - 1/4 cup
  • Rice vinegar - 3 TBSPs
  • Brown sugar - 2 TBSPs
  • Sesame oil - 1 TBSP
  • Cachugaru or Aleppo chili flakes - 1 TBSP
  • Sesame seeds - 1 TBSP
  • Red cabbage - 4 leaves, thinly sliced
  • Lime juice - 1 TBSPs
  • Sesame oil - 1.5 TBSPs
  • Scallion - 1, thinly sliced
  • Flour tortillas - 8 small
  • Cilantro - garnish
  • Lime wedges - garnish

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat ~8 minutes. Drain any excess grease.
  2. Add the garlic, ginger, soy sauce, rice vinegar, brown sugar, and sesame oil to the pan. Simmer for ~2 minutes, stirring frequently. Add the red pepper flakes and sesame seeds at the end.
  3. Toss the cabbage, lime juice, sesame oil, and scallions in a medium bowl to evenly coat.
