Olive Oil Cake

Ingredients

  • White flour - 1.5 cups
  • Sugar - 1 cup
  • Baking soda - 1/2 tsp
  • Baking powder - 1/2 tsp
  • Kosher salt - 1/4 tsp (1/8 tsp sea salt)
  • Eggs - 2
  • Whole milk - 3/4 cup
  • Olive oil - 1/2 cup
  • Citrus peel - 2 tsp, grated

Instructions

  1. Preheat the oven to 325 degrees.
  2. Oil and flour a 9x5x3 loaf pan.
  3. Whisk the dry ingredients in a large bowl.
  4. Whisk the wet ingredients and citrus peel in a medium bowl.
  5. Whisk the wet ingredients into the dry ingredients and transfer to prepped pan.
  6. Bake for 60-65 minutes, until a toothpick inserted into the center comes out clean.
  7. Cool for 20 minutes before removing from the pan.
