Carrot Muffins

Ingredients

  • Flour - 1 1/4 cups
  • Brown sugar - 1/2 cup
  • Baking soda - 1/2 tsp
  • Baking powder - 1/2 tsp
  • Nutmeg - 1/2 tsp
  • Coarse salt - 1/2 tsp
  • Rolled oats - 1 cup
  • Raisins - 1/2 cup
  • Olive oil - 3 TBSPs
  • Egg - 1 large
  • Milk - 1/3 cup
  • Carrots - 4 medium, shredded
  • Ripe banana - 1 medium, mashed

Instructions

  1. Preheat oven to 400 degrees F.
  2. Prep a muffin pan with olive oil.
  3. In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, nutmeg and salt until there are no lumps.
  4. Stir in oats and raisins. Add oil, egg, milk, carrots and banana and stir until blended.
  5. Fill muffin cups and bake for 20 minutes. Test with a toothpick.
