Carrot Muffins

Ingredients
- Flour - 1 1/4 cups
- Brown sugar - 1/2 cup
- Baking soda - 1/2 tsp
- Baking powder - 1/2 tsp
- Nutmeg - 1/2 tsp
- Coarse salt - 1/2 tsp
- Rolled oats - 1 cup
- Raisins - 1/2 cup
- Olive oil - 3 TBSPs
- Egg - 1 large
- Milk - 1/3 cup
- Carrots - 4 medium, shredded
- Ripe banana - 1 medium, mashed
Instructions
- Preheat oven to 400 degrees F.
- Prep a muffin pan with olive oil.
- In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, nutmeg and salt until there are no lumps.
- Stir in oats and raisins. Add oil, egg, milk, carrots and banana and stir until blended.
- Fill muffin cups and bake for 20 minutes. Test with a toothpick.
