Carrot Cake

Ingredients
- Flour - 1.5 cups
- Baking powder - 1 tsp
- Baking soda - 3/4 tsp
- Salt - 1/4 tsp
- Ground cinnamon - 1 tsp
- Ground ginger - 1/2 tsp
- Ground nutmeg - 1/4 tsp
- Vegetable oil - 1/2 cup
- Large eggs - 2
- Brown sugar - 1 cup
- Unsweetened applesauce - 1/3 cup
- Pure vanilla extract - 1 tsp
- Carrots - 1.5 cups, shredded
- Walnuts - 3/4 cup, chopped
Instructions
- Preheat the oven to 350°F. Grease a 9x5-inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
- In a medium bowl, whisk the oil, eggs, brown sugar, applesauce, vanilla, and carrots together until combined.
- Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Fold in the walnuts.
- Spread the batter into the prepared loaf pan. Bake for 55-65 minutes until a toothpick comes out mostly clean.
- Cool completely before removing from the pan.
