Carrot Cake

Ingredients

  • Flour - 1.5 cups
  • Baking powder - 1 tsp
  • Baking soda - 3/4 tsp
  • Salt - 1/4 tsp
  • Ground cinnamon - 1 tsp
  • Ground ginger - 1/2 tsp
  • Ground nutmeg - 1/4 tsp
  • Vegetable oil - 1/2 cup
  • Large eggs - 2
  • Brown sugar - 1 cup
  • Unsweetened applesauce - 1/3 cup
  • Pure vanilla extract - 1 tsp
  • Carrots - 1.5 cups, shredded
  • Walnuts - 3/4 cup, chopped

Instructions

  1. Preheat the oven to 350°F. Grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In a medium bowl, whisk the oil, eggs, brown sugar, applesauce, vanilla, and carrots together until combined.
  4. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Fold in the walnuts.
  5. Spread the batter into the prepared loaf pan. Bake for 55-65 minutes until a toothpick comes out mostly clean.
  6. Cool completely before removing from the pan.
