Pao de Queijo

Servings: 24 rolls

Ingredients

  • Egg - 1
  • Olive Oil - 1/3 cup
  • Milk - 2/3 cup
  • Tapioca Flour - Scant 1.5 cups
  • Grated Parmesan - Packed 1/2 cup
  • Kosher Salt - 2.5 tsps

Instructions

  1. Preheat oven to 400°
  2. Grease a 24-hole mini muffin tin
  3. Pulse all ingredients in a blender until smooth, scraping the sides of blender to mix well
  4. Fill the cups of the tin approximately 2/3 full
  5. Bake for 15-20 minutes
  6. Cool on a rack for a few minutes (if they don’t disappear first!)
