Simple Beans

Ingredients

  • Dried black beans - 1 pound (2 1/2 cups)
  • Large white onion - 1/2
  • Kosher sea salt - 1 TBSPs
  • Cilantro - 2 sprigs

Instructions

  1. Rinse the beans in cold water, pick them over, and drain. Place them in a large pot and cover with at least 3 inches of water.
  2. Add the onion and bring to a rolling boil over high heat. Reduce the heat to medium and cook at a happy simmer, partially covered, until the beans are soft ~1.5 hours.
  3. Add water as necessary to keep the beans covered.
  4. Add the salt and cilantro and cook for 15 minutes more, until the beans are so soft that they come apart if you hold one between your fingers.
  5. Remove the onion and cilantro if desired and serve.
