Simple Beans

Ingredients
- Dried black beans - 1 pound (2 1/2 cups)
- Large white onion - 1/2
- Kosher sea salt - 1 TBSPs
- Cilantro - 2 sprigs
Instructions
- Rinse the beans in cold water, pick them over, and drain. Place them in a large pot and cover with at least 3 inches of water.
- Add the onion and bring to a rolling boil over high heat. Reduce the heat to medium and cook at a happy simmer, partially covered, until the beans are soft ~1.5 hours.
- Add water as necessary to keep the beans covered.
- Add the salt and cilantro and cook for 15 minutes more, until the beans are so soft that they come apart if you hold one between your fingers.
- Remove the onion and cilantro if desired and serve.
