Ingredients
- Zucchini - 2
- Olive oil
- Parmesan cheese
- Salt
Instructions
- Set the oven to roast at 400 degrees (450 if no roast setting).
- Wash the zucchini, trim the ends and peel off any bad spots.
- Slice into 1/2 inch thick pieces.
- Place the slices in a glass dish or sheet pan and drizzle (not too much) with olive oil.
- Roast for 5 minutes in the oven, pull out and flip the slices then roast for another 5 minutes.
- Check that zucchini is warm all the way through but not soggy.
- Sprinkle with parmesan cheese or salt.
