Roasted Zucchini

Ingredients

  • Zucchini - 2
  • Olive oil
  • Parmesan cheese
  • Salt

Instructions

  1. Set the oven to roast at 400 degrees (450 if no roast setting).
  2. Wash the zucchini, trim the ends and peel off any bad spots.
  3. Slice into 1/2 inch thick pieces.
  4. Place the slices in a glass dish or sheet pan and drizzle (not too much) with olive oil.
  5. Roast for 5 minutes in the oven, pull out and flip the slices then roast for another 5 minutes.
  6. Check that zucchini is warm all the way through but not soggy.
  7. Sprinkle with parmesan cheese or salt.
