Chimichurri

Ingredients

  • Garlic - 2 cloves, smashed
  • Shallot - 1, quartered
  • Flat Leaf Parsley (Italian Parsley) - 1 large handful
  • Cilantro - 1 large handful
  • Mint Leaves - 1 small handful
  • Red Pepper Flakes - 2 pinches
  • Red Wine Vinegar - 3 TBSP
  • Honey - 1 tsp
  • Olive Oil - 1/3 cup
  • Sea salt - 1 tsp (1 TBSP kosher salt)

Instructions

  1. Combine all in blender and 1/4 cup olive oil
  2. Use a spatula to scrape down the sides of the blender
  3. Add the remaining oil in a stream with the motor running
  4. Consistency should be like thin pesto
