Chili Con Queso

Hey buddy, here’s the recipe, I’ve modified it a bit over time to make it easier.

Ingredients

  • Vegetable oil - 1 TBSP
  • Onion (yellow, white or sweet) - 1/2
  • Garlic - 1 clove
  • Velveeta - 1 lb (1/2 box)
  • Rotel diced tomatoes and green chilies - 1 can, 10 oz
  • Pickled jalapeños - 1/4 cup

Instructions

  1. Chop onion and mince garlic.
  2. Cut Velveeta into 8 cubes. I just leave the other half in the foil and wrap it tight with some plastic too, GTG for the next batch.
  3. Drain and chop up the jalapeños.
  4. Heat the oil in a medium saucepan, medium heat.
  5. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  6. Add the cheese cubes to this and stir frequently until melted.
  7. Then add in the tomatoes and jalapeños, stir well, it should be pretty smooth.
  8. Transfer to a bowl and get after it with some good chips.
