Mac & Cheese

Servings: 4 

Ingredients

  • Onion - 1 cup, diced
  • Butter - 2 TBSPs
  • Flour - 2 TBSPs
  • Milk - 2 cups
  • Dijon mustard - 1 TBSP
  • Extra sharp aged white cheddar cheese - 10 oz + 2 oz, grated
  • Salt - 1/2 tsp
  • Pepper - 1/2 tsp
  • Nutmeg - 1/8 tsp (pinch)
  • Tabasco sauce - 1/2 tsp
  • Corkscrew pasta - 8 oz (half box)
  • Parmesan cheese - 2 TBSPs, grated

Instructions

  1. Preheat oven to 400°F.
  2. In a large saucepan on low heat, melt butter and cook the onion until soft, 5-7 minutes.
  3. Stir in the flour. Turn off the heat and whisk in the milk.
  4. Return to medium heat and stir until the mixture begins to thicken. Don’t scald the milk!
  5. Turn off the heat. Stir in mustard, 10 oz of cheddar cheese, salt, pepper, nutmeg, and hot sauce. Keep this warm on low.
  6. Cook pasta until just al dente, about 30-60 seconds less than the instructions on the package.
  7. Drain the pasta, but don’t rinse it. The starch helps the sauce stick.
  8. Spread the pasta out in a 9x13 inch glass dish. Pour the cheese sauce over the pasta and stir to combine.
  9. Top with the remaining 2 oz of cheddar and the parmesan cheese.
  10. Bake for ~30 minutes, until browned on top.
