Mac & Cheese

Ingredients
- Onion - 1 cup, diced
- Butter - 2 TBSPs
- Flour - 2 TBSPs
- Milk - 2 cups
- Dijon mustard - 1 TBSP
- Extra sharp aged white cheddar cheese - 10 oz + 2 oz, grated
- Salt - 1/2 tsp
- Pepper - 1/2 tsp
- Nutmeg - 1/8 tsp (pinch)
- Tabasco sauce - 1/2 tsp
- Corkscrew pasta - 8 oz (half box)
- Parmesan cheese - 2 TBSPs, grated
Instructions
- Preheat oven to 400°F.
- In a large saucepan on low heat, melt butter and cook the onion until soft, 5-7 minutes.
- Stir in the flour. Turn off the heat and whisk in the milk.
- Return to medium heat and stir until the mixture begins to thicken. Don’t scald the milk!
- Turn off the heat. Stir in mustard, 10 oz of cheddar cheese, salt, pepper, nutmeg, and hot sauce. Keep this warm on low.
- Cook pasta until just al dente, about 30-60 seconds less than the instructions on the package.
- Drain the pasta, but don’t rinse it. The starch helps the sauce stick.
- Spread the pasta out in a 9x13 inch glass dish. Pour the cheese sauce over the pasta and stir to combine.
- Top with the remaining 2 oz of cheddar and the parmesan cheese.
- Bake for ~30 minutes, until browned on top.
