Ham and Beans

  • Beans need to be soaked 12 hours in advance.

Ingredients

  • Dried great northern beans - 1 lb
  • Garlic - 3 cloves, peeled and sliced
  • Sweet onion - 1 large, coarsely chopped
  • Kosher salt - 1 tsp (1/2 tsp sea salt)
  • Black pepper - 1/2 tsp
  • Italian parsley - 1 TBSP, chopped
  • Ground cloves - 1/4 tsp
  • Smoked ham hock - 1 lb
  • Chicken broth - 4 cups
  • Water - 2 cups

Instructions

  1. The night before you want to make the beans, put your 1lb of dried beans in a bowl and cover them with water by about 3”. Soak them like this overnight.
  2. In the morning, rinse and drain the beans, then put them in the crock pot.
  3. Add the garlic, onion, salt, pepper, parsley, cloves, and ham into the slow cooker.
  4. Add the broth and water. Stir it all up a little and cover the crock.
  5. Cook on low for 8 hours or until the beans are creamy and tender (can do an extra hour if needed).
  6. Remove the ham hock, shred the meat, and return it to the crock.
  7. Serve with hot sauce and corn bread or baguette.
