Fajitas

Ingredients

  • Olive oil - 2 TBSPs
  • Skirt steak - 1.5 lbs, thinly sliced
  • Smoked paprika - 2 TBSPs
  • Chili powder - 2 tsps
  • Cumin - 2 tsps
  • Dried oregano - 2 tsps
  • Salt - 1/2 TBSP
  • Black pepper - 1/2 tsp
  • Butter - 2 TBSPs
  • Garlic - 3 clove, chopped
  • Chili flakes - 1 tsp
  • Yellow onion - 1, sliced
  • Bell peppers - 2, sliced
  • Poblano pepper - 1, sliced
  • Tortillas - 10, warmed
  • Cotija cheese, limes, and cilantro

Instructions

  1. In the staub, combine the olive oil, steak, paprika, chili powder, cumin, oregano, salt, and pepper, toss to coat. Cook over medium-high heat until seared and cooked through ~10 minutes.
  2. Add the butter, garlic, and chili flakes. Cook ~2 minutes, then remove everything and set aside.
  3. In the empty staub, add the onions and cook until fragrant, ~5 minutes. Toss in the bell peppers and poblano peppers. Cook until the peppers are tender, ~5 minutes.
  4. Add the steak back and toss to combine.
  5. Serve with warmed tortillas, lime, cilantro, and cheese.
