Fajitas

Ingredients
- Olive oil - 2 TBSPs
- Skirt steak - 1.5 lbs, thinly sliced
- Smoked paprika - 2 TBSPs
- Chili powder - 2 tsps
- Cumin - 2 tsps
- Dried oregano - 2 tsps
- Salt - 1/2 TBSP
- Black pepper - 1/2 tsp
- Butter - 2 TBSPs
- Garlic - 3 clove, chopped
- Chili flakes - 1 tsp
- Yellow onion - 1, sliced
- Bell peppers - 2, sliced
- Poblano pepper - 1, sliced
- Tortillas - 10, warmed
- Cotija cheese, limes, and cilantro
Instructions
- In the staub, combine the olive oil, steak, paprika, chili powder, cumin, oregano, salt, and pepper, toss to coat. Cook over medium-high heat until seared and cooked through ~10 minutes.
- Add the butter, garlic, and chili flakes. Cook ~2 minutes, then remove everything and set aside.
- In the empty staub, add the onions and cook until fragrant, ~5 minutes. Toss in the bell peppers and poblano peppers. Cook until the peppers are tender, ~5 minutes.
- Add the steak back and toss to combine.
- Serve with warmed tortillas, lime, cilantro, and cheese.
