- Notes: Ground beef, ground bison, ground pork and ground turkey all work.
Ingredients
- Bacon - 2 slices thick cut, chopped
- Onion - 1 large, fine chopped
- Garlic - 1 clove, minced
- Ground beef - 1.5 lbs
- Ground cumin - 1.5 tsps
- Chipotle powder - 3 tsps
- Salt - 1 tsp
- Crushed fire roasted tomatoes - 14.5 oz can
- Tomato sauce - 8 oz can
- Modelo Negra - 1 cup
- Worcestershire - 1 tsp
- Pinto beans - 14.5 oz can, drained and rinsed
- Masa harina - 1/2 cup
- Cheddar cheese, scallions, cilantro, sour cream - For serving
Instructions
- In a large pot, cook bacon on medium-high heat until brown ~4 min
- Add onion and cook covered over medium heat until translucent, stirring occasionally ~7 min
- Uncover pot and add garlic. Cook ~1 min
- Turn heat to medium high, add the meat and cook until no longer pink ~8 min
- Mix in spices and cook for ~1 min
- Add tomatoes, tomato sauce, beer, and worcestershire. Bring to a boil and then reduce heat to medium-low
- Cover partially and simmer for 30 minutes
- Add beans and cook uncovered for 10 minutes
- Remove from heat, stir in masa harina and salt to taste
- Add sour cream, cheese, and scallions when served
